1. Preheat the microwave oven by pressing OVEN once, turn the dial to set the temperature to 180°C and press START/SET. In a mixing bowl, mix all the ingredients together, except the wonton skins and coriander. Set aside some diced mangoes for garnishing. Put the mixture in the mixer grinder and pulse until well blended.
2.Cut the wonton skins into approximately 5 cm squares. Press each square wonton skins into each cup of a non-stick muffin pan. Bake in the preheated microwave oven for 10 minutes or until browned.
3.Scoop a dollop of the filling with a spoon into the wonton skin cups.
4.Bake for another 10 minutes or until evenly cooked. Test it with a toothpick. If the filling does not stick to the toothpick, it is cooked through. Garnish with extra mango and coriander before serving.
