Ingredients

  • 600g mackerel cutlets
  • ½ tsp salt
  • ½ tsp cornflour
  • ¼ tsp white pepper
  • 1 tbsp oil
  • 3 stalks spring onion

Chopped Ingredients

  • 1 ginger bud
  • 1 stalk lemongrass
  • 5 red chillies
  • 3 kaffir lime leaves
  • 2cm young ginger
  • 2 cloves garlic

Seasoning

  • ½ tsp salt
  • 2¼ tsp sugar
  • 2¼ tsp lime juice
  • 1¼ tsp anchovy stock powder
  • ¾ tsp cornflour

Garnish

  • Chopped red chilies, sliced ginger bud and sliced kaffir lime leaves

 

Method

  1. Marinate the fish with salt, cornflour and pepper for 15 minutes.
  2. Line a casserole dish with spring onions and oil.
  3. Place the fish on top of the spring onions.
  4. Combine the blended ingredients and seasoning. Pour over the fish.
  5. Cook on Steam-High for 15 minutes or until cooked.
  6. Garnish with red chilies and freshly sliced ginger bud and kaffir lime leaves.
