- In a bowl, soak the 9-grain mix in the boiling water for 2-3 hours.
- Place all the ingredients (including the soaked grains), except for yeast, into the bread pan.
- Put the bread pan into the main body and place instant dry yeast in the yeast dispenser.
- Press Menu to select “4” (French bread).
- Press Start.
- When the bread is done, remove the bread pan from the machine and wait for 2 minutes, then remove the bread from the bread pan and cool it on a wire rack.
- 45 g 9-grain mix
- 65 g Boiling water
- 10 g Sesame seeds, freshly toasted
- 1⁄2 tsp Poppy seeds
- 160 g High protein fkour
- 60 g Wholemeal flour
- 20 g Rye flour
- 5g Salt
- 20 g Honey
- 21⁄2 tbsp Vegetable oil
- 130 ml Cold water
- 3⁄4 tsp Instant dry yeast
